How do Army moves work? What can/can't you pack yourself?

My husband's about to get to his duty station and I know the movers are going to come, since I'm going to be out for a while I wanted to leave the stuff ready to move. I already store many of our things in plastic bins...is this ok? from what I know there are certain things you are limited to pack on your own. Also, in the event neither of us can be home when the movers come who can sign for us?
